Let’s first say that in Puglia, as in all of Italy, there is seasonality. Everything has its own season to be used. What Puglia eats in summer, it doesn’t eat in winter and vice versa. 

In summer the tradition is to prepare light dishes, based on fresh tomato, no mushroom risotto, nothing stewed or stuffed or anything else heavy. It’s hot outside, so the meal should be appropriate.
